Cogito ergo sum ("I think, therefore I am") - René Descartes
There are many current buzz words used by educators to describe the concept of thinking skills — critical thinking, Socratic thinking, creative thinking, higher-order thinking, logical thinking, problem solving skills, etc" and there doesn't seem to be any universally agreed upon definition. However, the one thing I've found is that they all contain important aspects of learning that we want our children to grow up with.

When my children were young we used to spend a great deal of time having discussions before bed. I’m sure in part because my children knew I’d let them stay up just a tiny bit later :)
Two activities we used to play come to mind that improved their creativity.
Listen to a song then make up your own lyrics to the song
Choose a subject for a story then take turns each doing a sentence in the story
These also made great activities for the car.
